Jean-François Levesque is passionate about fine food and patisserie. His motto: reject the routine!

His mentors include Marc Meneau at L’Espérance in Vézelay, Burgundy (formerly three Michelin stars) for the simplicity of his dishes and pastry chef Pierre Hermé, whose guiding principle is “let pleasure be your guide.”

His cuisine at Les Grains d’Argent remains true to Marc Meneau, from whom he takes the philosophy “Look around you and cook with what you see.” It champions season produce local to Champagne, but not only that!

It also reflects his first love: patisserie.

The flavours are subtlety combined with a touch of sweetness, reminding us of his passion for desserts.

Jean-François is supported in the kitchen by a young pastry chef, who he has trained himself. Together they invent a unique dessert menu to cleanse and indulge the palate.

His signature dishes and specialties: Champagne (Bouzy) escargots with baby onions, mushrooms and lardons, Ratafia sauce (made from grape juice, known as must, and white alcohol) and several dishes served with homemade sauce, such as fillet of beef with Coteaux Champenois or pikeperch with a Champagne sauce and chives.

After working in the kitchens of several top restaurants in Champagne, Jean-François joined Les Grains d’Argent as a pastry chef in 2006 and became Head Chef in early 2014.

Fine food and champagne, fine food and wine, nothing is set in stone: the choice is yours…


The wonderful wine list has been put together by Annabelle Hazard, a Champagne native. Annabelle and her team will be delighted to help you choose the bottle that suits your taste and complements your meal.

The champagne list is very varied, featuring major houses as well as independent winemakers.

There are some rare finds amongst the blanc de noirs, blanc de blancs, vintage blanc de blancs, brut, non-dosage and extra-brut champagnes, vintages, rosés and saignée rosés, prestige cuvees…

Annabelle understands the winemaking process and this knowledge is now put to use in her selection of wines, especially Burgundies. But there’s something from every region, including Alsace, Bordeaux, Loire, Languedoc and the Rhône Valley… all carefully chosen for you.

An interior to match the cuisine: delicate, sophisticated and creative

The 1930s-inspired but thoroughly modern interior is divided into two halves. The dining room has a veranda for enjoying the open air and view over the vineyards of Hautvillers, the birthplace of champagne and the village where Dom Perignon joined Saint-Pierre Abbey in 1668 and invented the technique.

The spacious 90-seater room is very comfortably furnished and can be adapted to meet your needs.

Les Grains d’Argent also offers the luxury of two charming function rooms: one seating six to eight people on the veranda and the second a secret hideaway with views over the restaurant’s patisserie, seating six.

A large lounge area is open to guests. The champagne bar provides an opportunity to sample Les Grains d’Argent’s wonderful wine list with appetizers.

The cosy and welcoming interior, in soft colours lifted by “Veronese” green, is the handiwork of Annabelle Hazard, who has expressed her taste and flair for interior design.
